Can a dissolved company trade after dissolution?

Hi,
Last November 06 we signed a works schedule (not a contract) with a company to do our loft conversion. There have been building problems which we are now sorting out and we expect the completion certificate soon (within 5 weeks).
The company has been threatening us with debt collection (bankruptcy proceedings) since August 07 as he has not admitted liablility for a badly built staircase (although we are having a new one built at his expense as we haven't paid him yet) and feels we are unfairly withholding the money even thought the job isn't complete yet.
We have just discovered that at the time we signed the works schedule (Nov 07) the company was dissolved. It had been since Oct 06.
We have paperwork letters etc, from the dissolved company running into April 07.
Is this legal, and if the company doesn't exist then who do we pay?
The company was dissolved voluntarily.
Does the fact that he accuses me of 'manipulating the council' mean he is open to charges of slander?
