Club Trustee Queries

Hi, am a newbe to all this but was wondering if someone could help me?! I am a trustee of a sports club based in Northern Ireland and would like to know the following:
1/ Is there a minimum amount of trustees required for a club and if so what is it? What would the recommended number of trustees be - if there is such a thing? 2/ One of our trustees is also our club solicitor. Is there a conflict of interest here? Is it legal to act in both ways? Our solicitor will be acting on our before with a potentially very large (financially) development deal - could this cause a problem with him also being a trustee?
