And that's the million dollar question.

The simple answer is, guess. Make some inspired choices and use the overture tool to see how many people are searching for that term. If you go for the 'popular' keywords then you will have to work very hard to beat the competition. And I wouldn't expect to see any decent results in less than 6 months.

But there may be a better way. If I were a small business I would have the time to do much research on the net. But I would read my trade magazine. If you placed a full page advert in the magazine I reckon you would get a better ROI than promoting your services through a website.

I am determined to go this project 100% Internet marketing... and within the process have every intent of becoming a high-level competent at Internet Marketing.

Read, read and keep on reading.

Join the industry forums, keep up to date with SE development via the various industry monitors, set up a dummy site to experiment with marketing ideas, pay for some quality site statistics, ask questions, and so on.

If you want to be high-level compentent then I'd give yourself a couple of years. I would put money on it that many of the regular members of this forum have been learning their craft for a good few years and keep on learning as they hone their skills.

So my suggestion would be to keep reading from as many sources as possible, pick out the nuggets as you find them and them apply them to your site. And then wait a few months to see the effects of those changes. It's a slow business but if you want the fast track then you need to contribute a few pounds to the pot and pay someone for their knowledge.
