working percentages from gross takings - 04-04-2007, 05:21 PM

hi everybody.
hopefully i will be running my bar/cafe soon

a question about costs etc.

does anybody have good advise about percentages of costs.

ie, if I want to run food costs at 20% & drink costs at 10% of gross takings
what about staff salaries or any associated costs - legal/accounts,
rent, utilities etc.

any guidelines would be usefull
